What can I write to?

Any standard or custom sObject that Salesforce's describe API reports as createable or updateable for the connected user. Delete mode appears where the object is deletable. Read only objects and Tooling API objects are not available as destinations, and field level permissions decide what you actually see in the picker.

How is the matching record found?

Accepted Answer

You pick the source field and the Salesforce identity field, with exact equality by default. Update syncs can also match on a substring or a web domain. Record ID or an External ID is the safest choice. In create or create and update mode, a null identity produces a new record and a warning rather than quietly matching the wrong one.

Can Polytomic create custom fields in Salesforce?

No. It maps only fields that already exist and are writable. Create the field in Salesforce, grant the connected user access to it, then refresh the schema in Polytomic before mapping. A field that exists but is invisible to the connected user behaves exactly like a field that does not exist.

How do lookups and relationships work?

Map to the synthetic find by fields Polytomic exposes. It looks the related record up using an ID or External ID value and sets the underlying relationship, and arrays of IDs work for multi value relationships. By default a null or unmatched relationship fails the whole row and logs it, but advanced settings let you write the row without the relationship, or omit the row silently instead.

What happens to rejected rows?

Salesforce's per row error is recorded against the source identity, successful rows carry on, and sync history lets you retry. Validation rules, permissions, duplicate rules, triggers and record locking all surface as record errors rather than failing the whole reverse ETL run, which matters when one bad row would otherwise block thousands of good ones.
